His specialties lie in fine English confectionery such as Eccles Cakes, Banbury Cakes, Bakewell tarts, Lardy cakes etc. as well as Continental specialties such as Petit Fours, Croissants, Danish, Brioche as well as Palmierres. He is also a master decorator and has won prestigious awards in the U.K. for his wedding cake decorations.

In South Africa he has trained on fully automatic bread plants - the biggest being a Werner Pfleider 8000 loaves per hour fully computerized plant. As well as automatic roll plants such as Panomat, JBS, and Baketech.

He has also recently visited Russia to assist in developing new products for three fully automatic Rondo plants.
